LAURIC OILS



In the world of oils and fats, lauric oils are the Aristocrats. There are very few lauric oils and their commercial value is totally different from that of common oils and fats.

 

Among the approximately 17 major oils and fats marketed in the world, there are only two lauric oils: those coming from coconut or coconut oil (CNO), and those coming from the palm or palm kernel oil (PKO) seed.

They are called “lauric” because the lauric acid is the largest fatty acid in their composition(up to 50% in some cases), while the rest of the major commercial oils contain not more than 1% of this fatty acid (butter fat contains 3%).

 

As we have said, palm lauric oil derives from the processing of the palm seed, as opposed to the palm oil that comes from the meat that covers the fruit.

 The preponderance of lauric acid is what gives palm and coconut lauric oil the property of having an exact melting point. As a result, the products in which it is used have higher melting resistance at room temperature, thus the melting point of these products is lower.

 

This outstanding property of lauric oils determines its intensive use in the area of quality foods and justifies its higher price compared to that of non-lauric oils. Even after complete hydrogenation, the melting point of palm lauric oil is not lower than the temperature of the mouth, and its fractionation brings about an even more adjusted range of melting points.

 

This leaves a clean, fresh and non-greasy mouthfeel, which cannot be matched by any of the other non-lauric oils. Only cocoa butter comes close to this sensation, but it is extremely more expensive.

 

Palm lauric oils and their hydrogenated and fractionated products are used worldwide on their own or combined with other oils for making cookies, doughs, filling creams, cake frostings, ice-creams, whipping creams, cocoa butter substitutes for chocolate and toppings, and margarine with adjusted melting point, among others.
